Ingredients

half cucumber, peeled and grated
8oz low-fat Greek yogurt
2 cloves garlic, crushed
1 tbsp olive oil
1 tbsp chopped fresh mint
freshly ground black pepper

Method

Place the cucumber in a clean tea towel and squeeze until most of the liquid has been removed.
Combine with the remaining ingredients and serve.

Chef's tip

Tzatziki makes an excellent sauce to serve with grilled fish, meat or vegetarian main courses
